Wow. These were amazing. It took me a long time to make the cookies but it was worth it. The dough had to be put in the refrigerator for at least 2 hours and then again for 20 minutes after it has been rolled up. Brendan wanted me to make gingerbread cookies that was chewy and not crispy/hard. The result was quite soft and tasty. Good thing I made 2 batches to freeze because I'm not going to be baking it for awhile lol. Mmmm!
